Creamy Spaghetti with Mushrooms (Gluten & Dairy Free)

Ingredients

♥ 1lb spaghetti (gluten free)
♥ 2 tbs. minced garlic
♥ 8 oz Kite Hill Original Almond Milk Cream Cheese
♥ 2 scallions, chopped
♥ 1-2 packages of sliced mushrooms
♥ 2 tbs. ghee
♥ Salt & pepper to taste

Directions

➊ Bring a large pot of salted water to a boil on high. Cook the spaghetti according to package directions then drain.
➋ While pasta is cooking, heat ghee in a skillet on medium-high heat. Add the mushrooms, garlic, and scallions. Cook 10-12 minutes, until the mushrooms are golden. Stir often.
➌ When the mushroom’s are done, stir in the cream cheese. Cook 1-2 minutes, until the cream cheese is melted. Add ¼ cup of water and stir often.
➍ Combine spaghetti with mushroom mixture. Season with salt and pepper to taste. Garnish with extra scallions if desired. Enjoy!
