Kale, Potatoes, & Sausage

Ingredients

♥ Red potatoes, cut in half and boiled in salted water
♥ Salt, pepper, & thyme to taste
♥ Chicken sausage (or meat of choice)
♥ 1 medium onion, sliced
♥ 1 tbsp. garlic, minced
♥ 1 kale bundle, leaves removed & chopped
♥ 3 tbs. ghee

Directions

➊ Heat 2 tbs. of gee in a large skillet over medium-high heat. Add potatoes (cut side down) and cook until they begin to turn golden brown. Stir and continue cooking until all sides are crispy (~5-7 minutes). Season potatoes with salt, pepper, & thyme.
➋ Add 1tbs. of ghee and the chicken sausage to the potatoes. Cook until all sides of the sausage are crispy (~4-5 minutes).
➌ Add onions and cook until tender (~5 minutes). Stir often.
➍ Reduce heat to medium and stir in the garlic.
➎ Add the kale and cook until wilted (~3 minutes). Stir often to avoid burning the kale.
➏ Mix thoroughly and serve. Enjoy!

*If the kale overcrowds the pan, sauté the kale separately before combining everything
